Fishing boats dock at our jetty and the fish is unloaded weighed, graded and processed immediately. We only process Tuna Loins and H&G or G&Gwhole fish. The loins are vacuum sealed in polythene bags, weighed labelled and packed in Polystyrene Boxes (19" x 17" x 15") with gel ice. The gross weight of these is around 30Kg per box. The Whole Fishaverage upwards of 25Kg and are processed and wrapped in a foam like material and packed in Cardboard Boxes (61" x 18" x 14") with gel ice. The gross weight of these is around 115Kg per box.The fish is taken by boat to the nearby airport for despatch.
