Polylysine
CAS No.: 28211-04-3
Description
ε-polylysine is a naturally produced, cationic homopolymer of 25-30 L-lysine(due to Streptomyces albulus fermentation.), which was connected by ε-amido bond compounded by a e-amido of l-lysine and a e-carboxyl of another l-lysine. It can inhibit the growth of Gram(+) and Gram(-) bacteria such as E. Coli and Bacillus subtilis, yeast, moulds, lactic acid bacteria, thermophilics such as B,stearothermophilus, bacillus-bacilli., and Staphlacoccus aureus, etc
Effect
1> ε-PL can greatly inhibit the growth of bacteria, yeasts and moulds bacteria, especially to the Gram+ bacteria which can’t easily inhibit by other bio-preservatives.
2> ε-PL as a good preservative, is characterized as being high safety, water-soluble, stable at high temperatures, widely usage, non prejudice to the taste, antibacterial in neutral or subacidity conditions.
3> ε-PL can inhibit some heat-resistant bacillus after heat treatment and some tadpole-form noncontractile siphovirus as well, because of the stability when heated (120C for 20 min).
4> ε-PL can stop small intestine fat absorption through inhibiting pancreatic lipase activities, so it can be the diet therapy for obese patients. It can decompose for lysine within the body, and can be completely digested absorption.
5> ε-PL can be used in cosmetics, disinfectant or cleaner for food machinery or hutch, etc.
Usage
ε-PL was generally recognized as safe as food preservative by FDA in October, 2003.
It is widely used as food preservation in rice, noodles, cakes, snacks, and ice creams, salad, canned foods and meat products. It can be automatically hysrolized into nutritive amino acid, lysine without any harm to the body. It can also be used as a carrier for pharmaceutical molecules. With good absorption of liquid, it is used in SAP to produce sanitation products, such as sanitation napkin and diapers.
You may confect the 5-10% ε-Polylysine solution with cold boiled water or distilled water, then put it into the food and mix fully. If it is used together with other food preservatives, can attain better effect.
Physical and Chemical Properties
ε-Polylysine is slightly bitter, hygroscopic, light yellow powder. It is soluble in water, slightly soluble in ethanol, insoluble in organic solvent such as ethyl acetate, ether, etc
The molecular of E-Polylysine is a straight chain polymer of L-lysine.
