Soba is the Japanese name for these delicious noodles made from the original freshly milled heirloom grains, these grains have been grown for over 5000 years in China , which are well adapted to their environment and are cultivated by Chinese farms using techniques, and have been passed from generation to generation who have incredible respect for the land. They provide a mineral–rich pasta that's been grown without synthetic fertilizers, herbicide or pesticides. BioFarms uses these special milled heirloom grains and traditional craft roll–and–cut, naturally air dried at ambient temperatures to produce gourmet organic Soba with a smooth, silly texture.
